Meet Shelia
Shelia, a native Houstonian born and raised in Texas, and Michael, originally from Lake Charles, Louisiana, spent over 30 years in Texas before relocating to Lawrenceville, Georgia. Coming from Houston, where the summer heat is relentless, shaved ice was a vital source of relief for them. In their first summer in Georgia back in 1998, they sought a shaved ice retailer to beat the heat. To their surprise, they could not find one in the Atlanta area, which inspired them to start their own business. By 2004, they purchased their first red shaved ice trailer, located about half a mile from their brick-and-mortar store. Unfortunately, after only two months, local authorities classified them as peddlers due to their trailer being mobile. The only way to continue operations at that location was to construct a permanent building. To resolve the issue, they rented a space at 1495 Duluth Highway, where they opened Lawrenceville, Georgia's first gourmet shaved ice store. This location, situated in a shopping center, proved successful as loyal customers recognized them from their trailer and continued to support their business. Their patrons from Lawrenceville, Duluth, and nearby cities in Gwinnett County played a key role in transforming their dream into reality.
Eventually, they relocated to Crosby, Texas, resuming operations as a shaved ice store. Following a successful first summer, they decided to remain open year-round. The menu expanded to include fried wing baskets, fried fish, and shrimp baskets. Over time, their offerings grew, transforming them into a full-service breakfast, lunch, and dinner establishment. In 2018, they rebranded from "Three Sisters Gourmet Shaved Ice" to "Three Sisters Cajun Specialtz" to reflect their comprehensive food and dessert menus.
